Refreshing Summer Watermelon and Chickpea Salad #CErecipes
Introducing my super simple and very refreshing chickpea, watermelon and cucumber salad. It's so easy, simple and quick, making it the perfect lunch or side dish for hot summer days.
Ingredients:
- 1x can chickpeas
- 1/2 large cucumber
- 3x cups chopped watermelon
- a handful of fresh mint
- extra virgin olive oil
- dried herbs
- 1/2 lime juice
- Salt
Method:
1. Chop the cucumber into bite-size pieces, adding it to a bowl along with the chickpeas. Wash and chop the watermelon, allowing 3x cups worth of the fruit for the salad.
2. Add a handful of fresh mint, a sprinkling of dried mixed herbs and a good seasoning of salt to the bowl, along with 1/2 lime juice and the oil. Mix everything together until thoroughly coated in the seasoning.
Serve alongside frilled fish, quinoa, or as a full dish alone. Store in an airtight container in a cool part of the fridge for 3x days. Enjoy!
